Mango Coconut Pannacotta without Gelatin

Its summer, Lockdown, approaching the end of mango season and kids are tired of usual desserts, so I decided to make refreshing Mango coconut pannacotta┬ásimple 4 Ingredients As a highlight, we will not be using gelatin, rather we will be using Agar Agar which is plan based and does the Job of Gelatin. This is also a vegan recipe. In my family everyone loves mangoes and I happen to get good Kesar Mangoes locally. The Mangoes were so sweet and tasted excellent.     Mango Pannacotta
  • 1 qt mango (Medium Size )
  • 90 g Sugar (You can add more sugar based on the Sweetness of mango)
  • 1 tbsp Agar Agar
  • 200 ml Water
  • Coconut pannacotta
  • 1/2 cup Coconut Milk
  • 110 g Sugar
  • 1 tbsp Agar Agar
  • 200 ml Water
    Mango Panna Cotta
  1. Peel the Skin of a medium-size mango and blend into a paste in a mixer or blender without adding water.
  2. To a saucepan add water,
  3. Immediately add sugar and Agar Agar when the water is cold. Bring it to boil in high flame. It usually would take about 5 to 7 minutes for the Agar Agar to completely dissolve once the solution starts to boil.
  4. Use a Spoon to check if you can see the Agar Agar granules. If can see continue to stir in high flame, until all the granules are dissolved.
  5. Once the Agar Agar is completely dissolved without any Granules, add Magno paste and stir only for 30 minutes.
  6. Immediately transfer the mixture while it is in boiling hot to the container / Glass of your choice. Add only half a glass of mango Pannacotta and move to next glass. To remove the bubbles, use a Spoon and gently tap on it that is on the top layer. Place the Mango pannacotta in the refrigerator for 2 hours
  7. Coconut Panna Cotta
  8. After 2 hours, to a Sauce Pan add water and Sugar.
  9. Immediately add Agar Agar and stir in high flame. once the Agar Agar is completely dissolved, use a spoon to check if it is completely dissolved.
  10. Add Coconut milk and Stir only for 20 to 30 seconds.
  11. Use a Spoon and gently pour the coconut Pannacotta on the spoon to avoid creating craters on the mango layer Place the Pannacotta in the fridge for at least 1 hour. Serve Chill with fruits of your choice. Happy Cooking!!!
Recipe Notes

The best part about Agar Agar is that it is capable of turning into jelly consistency even in room temperature, we are placing it in the fridge only to solidify quickly. Do Not Freeze the PannaCotta, place it only in the Fridge. If the pannacotta solidifies too quickly, heat it again and bring it to boil for flowing consistency. Agar Agar is suitable for vegetarians.
