This Easy and quick Lemon rice delicious with little tangy flavor! This is one comfort food, which is so simple to make. Its just take 5 Minutes to make it , when you have cooked white rice already.

The combination of lemon rice and potato fry always my favorite during my college days. My mother used make this rice with Coconut oil. It tastes yummy.

  • Heat a pan and add 2 tbsp of coconut oil. once oil is hot add Mustard seeds.
  • Add channa dal.
  • Add urad dal and stir until it turns into golden color.
  • Add Peanuts and fry it for 20 seconds (if you have curry leaves add at this stage)
  • Add dry red chillies and fry it and bring the flame to low.
  • Add the turmeric powder.
  • Add Salt as per your taste and stir it well.
  • Add freshly squeezed lemon juice and mix it well.
  • Turn off the flame, add the cooked white rice and mix it well..
  • Add coriander for garnishing.
  • Service it will Pickle or Potato fry.

Notes

Do try using coconut oil for this recipe. It really enhance the flavor of the rice.
