I loved Brinjals. This simple version of using Kathirikai or brinjal / Aubergines is easy to make gravy is aromatic curry and spicy masala. Good combination for rice, briyani and pulao/chapathi and this is lunch box recipe too.

It is rich in antioxidants and vitamin C. Brinjals / Aubergines is part healthy diet.
