  • Wash the strawberries and blend them in a juicer without adding any water. No need to filter the Juice.
  • To a large bowl add the double cream.
  • Use a Hand whisker or hand mixer. Whisk the cream in slow speed.
  • It usually takes about 4 to 5 minutes in Hand Mixer to turn cream to a foam. Whisk until you get a steep hill foam as shown in the picture.
  • You will be able to see the Foam hill structure in the bowl as well.
  • Add Icing sugar(powdered sugar) / Condensed milk to the cream. Whisk for about 30 seconds.
  • Add the blended Strawberry juice to the mixture.
  • Blend the whole mix, until you get the steep hill structure in the hand mixer.
  • Do not overrun the Mixer over past this stage. NOTE: Your Ice Cream will be rock hard if you overrun the hand mixer past this stage.
  • Transfer the soft mixture to a bread tin / Box.
  • Cover it with a lid or foil and freeze overnight or at least 3 to 4 hours.
  • Our creamy, soft yummy strawberry Ice Cream is ready. You may garnish with Fresh / Frozen fruits of your choice. Happy Cooking!!!

Don't overrun the hand mixer in high speed, it would solidify the cream in less than a minute. You will end up with Rock Hard Ice Cream.
