Coconut Flour Blueberry Muffins

I wanted to try something different, so I tried baking the muffins only with Coconut flour. The smell and taste of this muffin would tempt anyone. The coconut flour gives an additional flavor to this Blueberry Muffins. This recipe is also gluten free.

You can even have this as a breakfast with Fruits and honey.

This will be always on My To Do list for any parties or get together.

I have used whipped cream, Blueberry and Strawberries to decorate. From my experience this combination is out of the world.

You may use Home made Blueberry Jam as well.

    Preparing Flour Mixture
  • Use a large bowl for preparing the muffin Mixture
  • Add Coconut flour. If you need the muffins to be fluffy, add 2 Tablespoon of Almond Flour or Plain flour at this stage.
  • Add Sugar. I have powdered the sugar, as the granules were big and won't dissolve quickly.
  • Add baking Soda
  • Mix the added ingredients and make sure there are no large Lumps.
  • Preparing the Muffin Mix
  • Use an small bowl for preparing this mixture.
  • Add melted Butter.
  • Add an Egg.
  • Add Milk.
  • Using an Whisk or Fork mix the whole mixture. You may also use the egg beater.
  • Add the egg mixture in portions to the flour mix.
  • Mix it well with a spatula or spoon.
  • Add Vanilla Extract and mix it well.
  • Add the Blueberries.
  • Mix it well to form a single mixture as show in the picture.
  • Use the Muffin plate. Add the paper Muffin cups. No need to add butter.
  • Add the Muffin Mixture with an spoon.
  • Add water to the blank ones. This keeps the muffin moist. Preheat the oven to 170 Degree Celsius for 10 minutes. Keep the mixture in top layer for 15 Minutes.
  • After 15 Minutes turnoff the oven and leave the muffins in oven for another 10 minutes. Once taken out, allow 10 more minutes for it to cool down.
  • Healthy, Coconut flavor Blueberry Muffin is ready. This Muffin can be severed with Fruits, Whipped Cream, Fruit Jam or Ice Cream. Do try recipes and share your comment in the below section. Happy cooking!!!

Notes

Make sure you choose small Blueberries.

I had to use the Large blueberries due to Lockdown.
