Most of us are crazy for Manchurian dishes, especially Chicken Manchurian whenever we enter an hotel. The First starter that most of us always order is Chicken Manchurian. Chicken Manchurian is one of the dishes that is Loved by all ages.
During Lockdown, I decided to try it myself. There are so many different methods of cooking chicken Manchurian, however I decided to cook in Chinese method, where the chicken is tender and juicy.
Chicken Dry Manchurian

    Items Required for Chicken fry
  • 500 g Boneless Chicken
  • 2 tsp Cornflour
  • 1 tsp Red Chilli Powder
  • 1 qt Egg White
  • 1/2 l oil (For Frying Chicken )
  • g Salt (As per your requirement )
  • Items required for Manchurian
  • 2 qt Garlic Cloves (Sliced)
  • 50 g Ginger (Sliced )
  • 1 qt Onion (Cut into medium size cubes)
  • 1 qt capsicum (Cut into medium size cubes )
  • 3 qt Spring Onions (Finely Chopped)
  • 3 tbsp Soy sauce
  • 2 tbsp Rice White Vinegar
  • 20 ml Water (To make Cornflour solution)
  • 1 tbsp Cornflour
  • 5 - 10 ml Oil (For Sauteing )
  • Salt (As per your taste)
    Preparing Chicken
  1. Add an Egg white to a medium size vessel / bowl.
  2. Add Chilli Powder, Cornflour and salt. Mix it together. (No need to add water)
  3. Add Chicken and mix it well. Marinate it 20 minutes.
  4. After 20 minutes
  5. To a frying pan, add Oil and fry the chicken in medium flame.
  6. Use a tissue to observe the excess oil.
  7. Cooking Manchurian
  8. To a pan add oil.
  9. Once the oil is hot, reduce the flame to low medium and add Chillies, Garlic and Ginger. Saute for about 1 minute.
  10. Add Onions, Increased the flame to medium and saute until the onions are half cooked.
  11. Add capsicum and salt. Saute for another 2 minutes.
  12. Add the fried chicken.
  13. Add Soy Sauce and saute for 30 seconds.
  14. Add Rice white Vinegar and saute well for another 1 minute.
  15. Add the Cornstarch solution and mix it well. The water would evaporate and Manchurian would turn into thick consistency.
  16. Turn off the flames and add Spring onions and mix it well.

Recipe Notes

I have cooked with the available vegetables at home during lockdown. However your may add additional vegetables of your choice. Also, you may use Kashmiri Chilli Powder to add good color to the Manchurian and avoid using any artificial colors.
