Butternut Squash-Pumpkin Stir Fry / Mathanga Thoran

Butternut Squash-Pumpkin Stir Fry or Mathanga Thoran is quick and easy to make it. It is delicious and simple Kerala style recipe goes well with rice and especially with curd rice.

Butternut Squash and Pumpkin has a number of nutrient values and is easy to digest. In this recipe, I have used Pumpkin and coconut, which is a great combination. You can use Butternut Squash or Pumpkin for this recipe.

  • Peel the skin and chop into medium-sized cubes.
  • Take one cumin seeds, green chillies, fresh coconut
  • Add in a mixer jar grind them into a coarse paste.
  • Heat coconut oil in a pan, add mustard seeds
  • When mustard seeds splutter, add shallots and curry leaves
  • Saute until turns transparent, add pumpkin
  • Mix well. Saute for 2 minutes then cover and cook for 10 to 15 in low to medium flame. Stir in between
  • Once pumpkin cooked 3/4th, add coarse coconut paste.
  • Mix well and cook for 5 to 8 minutes.
  • Healthy and Nutritious pumpkin stir fry / mathanga thoran is ready to be served with Rice. Happy Cooking!!

Notes

You can use large onion instead of shallots.
