Delicious and Brinjal / Eggplant Fry with simple ingredients and spice powder. This dish will be a Perfect starter or an evening snack.

The aubergine or the eggplant has a number of health benefits too.

  • In a bowl add coriander powder, turmeric powder, cornflour, chilli powder, pepper powder,garam masala and add salt to taste. Mix all the ingredients with water( 1 tbsp or 2 water)
  • After mixing all spices then add Coconut oil. (Any oil you prefer) The batter should be little thin.
  • I have taken one eggplant and washed and cut them into slices (about the size not too thin or not too thick) the perfect size shown in the picture. Coat the masala on eggplant either by using a spoon or hand. masala paste we coated them nicely on eggplants and keep it aside for 15 to 20 mins.
  • now it's ready to make shallow fry on the pan..keep the gas stove in low to medium flame add oil in a pan.(any oil you prefer)
  • Now keep in medium flame and cook for 1 minute each side and flip into another side 1mintue. Both sides cooked well and really crispy too!
  • Wow, now our crispy pan-fried eggplant/aubergine is ready to be served! Happy Cooking!!

Notes

You can add Cornflour or rice flour as well.

Adding coconut oil will enhance the smell and taste of this dish.
